Spring has finally arrived. And spring means late-night aperitifs at sunset with friends and/or family. So, to accompany these convivial moments, we have selected, with the help of our oenologist, six food/wine pairings that fit perfectly!
Which white wines for the aperitif?
Favorite wine for aperitifs, white wine has more than ever its place on our tables this spring!
Larmoni White
With its pretty pale yellow color and its aromatic nose with citrus notes, Larmoni white, made from 100% Sauvignon, is a fresh and well-balanced white wine that is perfect for an aperitif.
In the mouth, this wine brings a pleasant touch of grapefruit and lychee flavors. Larmoni white is the harmony of the aromas of this vintage.
The proposal of our oenologist:
Larmoni goes perfectly with some fresh oysters from the Bassin d’Arcachon!
A salad with roasted goat’s cheese will also go well with the white wine Larmoni.
This wine should be drunk between 8° and 10°C.
The Grand Théâtre Sweet white
Just like the Grand Théâtre in Bordeaux, this white wine is an emblematic wine at Univitis, both elegant and convivial, it offers a symphony of aromas.
Made from 80% Semillon and 20% Muscadelle grapes, Grand Théâtre AOP Bordeaux Sweet white is a lovely combination of roundness and liveliness. It is a white wine with notes of citrus and honey bringing freshness and softness in the mouth.
It will accompany your spring aperitifs with refinement!

Simply as an aperitif or as an accompaniment to dessert such as a fruit salad, the white wine Grand Théâtre promises a beautiful moment of greed.
This wine should be drunk between 9° and 12°C.
Which rosé wines for the aperitif?
For the arrival of spring, rosé wine is ideal for an aperitif with friends.
Univitis has chosen for you two rosé wines that will be perfect for these warm moments.
Côté Atlantique
Made from 50% Cabernet Franc, 30% Merlot and 20% Cabernet Sauvignon grapes, the Côté Atlantique rosé offers you a trip to our region and its coast!
With its beautiful pale salmon pink color and its notes of fresh red fruits (such as strawberry or raspberry) the Côté Atlantique is a perfect ally for festive and convivial aperitifs in the spring. It will leave you with a long lasting taste with a final touch of acidulous English candy.
Our oenologist’s suggestion for pairing:
The Côté Atlantique rosé wine will go wonderfully with barbecued prawns (we can already see ourselves enjoying it!).
For those who like to eat cold in spring, this rosé wine will also go perfectly with a Caesar salad and its fresh ingredients.
This wine should be drunk between 7° and 11°C.
The Château Les Vergnes rosé
First organic vintage in 2021, the estate where the Château Les Vergnes rosé wine is produced is qualified as “Agriculture raisonnée” and labeled High Environmental Value since 2014.
100% Cabernet Franc, it is a wine with aromas of citrus, pink grapefruit with notes of redcurrant. Château Les Vergnes guarantees fresh and generous notes in the mouth, with a balanced composition between purity and greedy red fruit aromas.
Our oenologist’s suggestion for pairing:
With this fresh and generous rosé wine, Spanish tapas (Pintxos, empanadas or even tortilla) are a complete match.
You can also marry Château Les Vergnes rosé with a nice plate of cold cuts from our region.
This wine should be drunk between 7° and 11°C.
Which red wines for the aperitif?
Just like white wine and rosé, red wine goes very well with springtime aperitifs. By choosing the right bottle of red wine, it is possible to accompany everything!
Univitis has therefore selected its best red wines for this pleasant moment.
The Larmoni Red
With its blend of 50% Merlot, 25% Cabernet Sauvignon and 25% Cabernet Franc, the red wine Larmoni offers a magnificent symphony of aromas. Larmoni is a sweet and aromatic wine.
With its purple color, it will bring you fine and silky notes in the mouth, with a well balanced final note.
Our oenologist’s pairing suggestion:
Unquestionably, Larmoni red goes perfectly with grilled meats prepared on the barbecue. It will make your mouth water!
For the more gourmet, you can also match Larmoni Rouge with a roasted Camembert.
This wine should be drunk between 15° and 17°C.
La Fleur de Mondésir Red
With its beautiful intense ruby color, the red wine Le Fleur de Mondésir is a wine that is a pleasure to drink. Coming from the Bergerac vineyard, it is a wine with fruity notes and greedy tannins that reveals some light spicy notes. Made from 70% Merlot, 15% Cabernet Sauvignon, 15% Cabernet Franc, La Fleur de Mondésir contains aromas of ripe red fruit and acidity with notes of roasted grapes and sweet spices. This red wine will leave you with a spicy finish for your enjoyment!
Our oenologist’s pairing suggestion:
La Fleur de Mondésir red wine will go wonderfully with marinated duck aiguillettes.
Our chef’s tip: for the marinade, mix honey, soy sauce, vinegar and pink berries to add a little crunch!
This wine should be served between 15° and 17°C.
