What is a Blanc de Noirs wine?

A Blanc de Noirs wine is a white wine made from black grape varieties traditionally used to make red wines. This vinification process has been used for years to create Champagnes using grape varieties such as Pinot Meunier and Pinot Noir.

The origins of our Blanc de Noirs

Blanc de Noirs wines are very popular for sparkling wines, but much more innovative for still wines. Faced with a growing demand for white wines from our customers, and with our parcels of white grape varieties limited, we had to be bold and creative. This led to the idea and desire to create a Blanc de Noirs wine. We chose to make this wine from Cabernet Franc, a particularly aromatic, naturally light-fleshed variety that accounts for 30% of our vineyards. It’s a good way of meeting our consumers’ expectations while bringing our terroir to life.

How is our Blanc de Noirs wine made?

Making Blanc de Noirs wine requires exceptional expertise, from the vine to the cellar, a challenge we took great pleasure in meeting.

Choosing the grape variety

Everything starts with the choice of grape variety. To make a Blanc de Noirs wine, you need to select a black grape with white pulp. For our wine, we carefully chose Cabernet Franc for its distinctive aromatic profile: fresh, fruity and elegant.

Harvesting

The grapes are harvested early in the morning, at the coolest time of the day, to preserve all the aromatic freshness of the wine.

Vinification

The grapes are pressed immediately after harvest to extract the juice. It is crucial to minimize contact between the juice and the skins, so as not to extract the color contained in the grape skins.

Fermentation can then get underway, and is carried out gently to encourage the development of the aromas and complex flavors characteristic of white wine.

Vinification continues in the same way as for a classic white wine. The wine is aged in vats, where it develops its aromas, texture and complexity.

Before bottling, the wine is filtered to eliminate suspended particles and improve transparency. This helps ensure the wine’s stability and prevents unwanted precipitation in the bottle.

A brilliant sensory experience

This meticulous, bold winemaking process produces a Blanc de Noirs wine with distinct taste characteristics that enrich the aromatic palette of classic white wines.

The wine has a brilliant pale yellow color. On the palate, floral and white fruit notes are intensely expressed. Subtle notes of fresh, crunchy red berries, characteristic of Cabernet Franc, add complexity to this Blanc de Noirs. A very expressive wine on the palate, with magnificent volume and a long finish.

Unique pairings for Blanc de Noirs wine

Blanc de Noirs wines offer a variety of food and wine pairings, going beyond the boundaries of dishes traditionally associated with white wines to include rosé pairings as well.

This wine pairs perfectly with refreshing ceviche, grilled fish, crisp salads, grilled meats and fresh or hard cheeses.

Bottled a few days ago, our Blanc de Noirs wine is now available to our professional customers. For tastings or further information, please do not hesitate to contact our teams. We’ll also be delighted to present our Blanc Noirs at Prowein in Düsseldorf (Hall 9 Stand F 65) from March 10 to 12, and at Foodex Tokyo from March 5 to 8 (EST Hall 3 Stand n°E3-C07-05).
